Good chocolate chip cookies recipe

 Just made this one today:

I did half of the recipe and avoided the walnuts  - made about 20 cookies

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tsp hot water
  • 1 1/2 cups flour
  • 1 cup semi-sweet chocolate chips

 

Preheat oven to 350 degrees F (175 degrees C).

Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Stir in flour and chocolate chips. Drop by large spoonfuls onto ungreased pans.

Bake about 10-12 minutes

Lidah Kucing Recipe

Took this from my friend's blog - but I definitely would like to try it!
It's one of my favourite cookies.

What You Need:
  • 250 gr butter/margarine
  • 150 gr icing sugar
  • 1/2 tsp vanilla extract
  • 250 gr all purpose flour
  • 5 egg whites
The How To:
  • Beat butter/margarine with icing sugar and vanilla until soft and fluffy.
  • Stir in the flour.
  • In a separate bowl, beat the egg whites until stiff
  • Fold in the egg whites into the butter mixture
  • Scoop mixture into a plastic bag (ziploc works well) and cut out one of the corners.
  • Squeeze out onto a buttered cookie sheet in a 2.5" long stick shape, leaving space in between. They MELT!
  • Bake at 160 celcius for 20-30 minutes, depending on the size of your sticks. Bake till golden brown and crunchy.
When I'm done - hopefully it looks like this!

Chocolate Pudding Cookies

The concept sounds intriguing... cookies and pudding!
I don't think I'll be adding the mini robin eggs - I guess it's not Easter cookies.  It's more just chocolate cookies :)

Chocolate Pudding Cookies with Mini Robin Eggs


Yield: 3 dozen cookies
Cook Time: 10-12 minutes

Ingredients:

1 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/4 cup granulated sugar
1 (3.4 oz.) package chocolate  instant pudding mix
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt (omitted)
1 cup milk chocolate chips
1 1/4 cups Mini Robin Eggs (colored malted milk Easter candy), chopped (omitted)

Directions:

1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicone baking mat and set aside.
2. Using a mixer, beat together butter and sugars until creamy. Add in chocolate pudding mix, eggs, and vanilla extract. Mix until smooth.
3. In a medium bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the chocolate chips and Mini Robin Eggs.
4. Drop cookie dough by rounded tablespoons onto prepared baking sheet.  Bake for 10-12 minutes, or until cookies are set. The middles will not be completely done. Remove cookies from oven and let cool on baking sheet for 5 minutes. Transfer to a cooling rack and cool completely.
Note-if you can't find Robin Eggs, you can use malted milk balls.

4/18: I haven't tasted the cookies yet since it's still Lent.  1.5 days left to go!  People around me told me it's good.

Sugar Cookies Recipe

Easter is coming up - can't wait to make Easter treats!




Ingredients
3 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt (note: omitted)
1 1/4 cups unsalted butter, softened
1 cup sugar
1 egg
1 tablespoon milk
2 1/2 teaspoons vanilla

Directions
  1. In medium mixing bowl combine flour, baking powder, and salt; set aside. In large mixing bowl beat butter on medium to high speed for 30 seconds. Add sugar. Beat until combined, scraping sides of bowl as necessary. Beat in egg, milk, vanilla, and lemon peel. Beat in as much flour as you can with the mixer. Stir in any remaining flour. Divide dough in half. Cover and chill 1 hour or until easy to handle.
  2. Preheat oven to 375 degrees F. Roll half the dough at a time, between sheets of waxed paper, to 1/4-inch thickness, sprinkling bottom sheet of waxed paper with flour if cookie dough sticks. Cut with desired cutters (if dough becomes too soft, return to refrigerator). Place 1 inch apart on ungreased cookie sheets. Bake for 8 to 10 minutes or until edges are firm and bottoms are barely light brown. Transfer to wire rack to cool. Makes about 2-1/2 dozen (2-1/2- to 3-1/2-inch) cookies.

Oatmeal Raisin Cookies Recipe

Serves 36
Whisk together and set aside

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt

Cream wet ingredients

1 cup unsalted butter, softened
1 cup sugar
1 cup dark brown sugar, firmly packed
2 large eggs
2 teaspoons vanilla

Then stir in

3 cups oats (not instant)
1 1/2 cups raisins

Directions:

Preheat oven to 350°.

Whisk dry ingredients; set aside.

Combine wet ingredients with a hand mixer on low.

To cream, increase speed to high and beat until fluffy and the color lightens.

Stir the flour mixture into the creamed mixture until no flour is visible.

(Over mixing develops the gluten, making a tough cookie.) Now add the oats and raisins; stir to incorporate.

Fill a #40 cookie scoop and press against side of bowl, pulling up to level dough (to measure 2 tablespoons of dough).

Drop 2-inches apart onto baking sheet sprayed with nonstick spray.

Bake 11-13 minutes (on center rack), until golden, but still moist beneath cracks on top.

Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.
